    Rugged West Cork, in Ireland, provides the perfect maturing conditions for our award winning Irish whiskey.

    Originally distilled in a traditional copper pot still, HYDE whiskey 10 year old pure Single Malt is double matured. Firstly in flame charred, first fill, oak bourbon casks, and then ‘finished’ in vintage Oloroso Sherry casks.

    HYDE is Handcrafted in very small limited edition batches and non-chill filtered for a more original character.

    HYDE is a presidential quality whiskey, celebrating the inaugural appointment of Ireland’s very first president Douglas Hyde and the establishment of the Irish Free State in 1922.

    A 100% malted Irish barley whiskey from one single distillery – HYDE Single Malt is a true taste of IRELAND.

    SHERRY FINISH – VINTAGE SPANISH OLOROSO SHERRY CASKS

    At HYDE we use TWO different casks to age our Sherry finished whiskey.Hyde Single Malt Irish Whiskey

    STAGE 1: BOURBON CASK : A 200 litre American White Oak Bourbon barrel. This American barrel was originally used just once to mature bourbon whiskey. It imparts flavours such as Vanilla, honey, fudge and caramel sweetness to the whiskey.

    STAGE 2: SHERRY CASK : A 250 litre toasted Spanish Oloroso Sherry cask sourced in the Andalucia region of Spain. These hogsheads’ are first fill sherry casks which originally contained sweet Oloroso Sherry for at least 2 to 4 years.

    • NOSE: Delightful peaches & cream, vanilla, barley malt softness, with citrus, sweet, honey, caramel, chocolate, orange, lemon, & infused with spices.

    • TASTE: Wonderfully smooth yet complex, creamy yet fruity with notes of caramel and Manuka honey, apricot, plum, and a silky malt texture.

    • FINISH: Rich, Spicy, & Oaky. It lingers in the mouth with a long creamy rich finish.

    • Nose:On the nose, the virgin oak from the first fill bourbon barrels is dominant after ten years of maturation. There is also some fruit as one would expect from the sherry influence which reminds me of dark Irish Fruitfield Marmalade. The nose is shorter than I would have expected.
    • Taste:Tasting, the initial impression is malt heavy with a warm and full mouth fill. Again, the oak is quite pronounced along with some bitter-sweet dried fruits and orchard fruits, burnt oak notes and black pepper spiciness. Surprisingly smooth on the tongue for a double distilled whiskey at 46%! The addition of a splash of water yields an exceptionally smooth and mellow ball of malt to swirl in the hand.
    • Finish:The finish is long and is dominated by burnt oak and pepper with a hint of bitter chocolate in the background.
      The Oloroso Sherry Cask finish has definitely added some real magic to this ten year old malt.
